Low Carb Healthy Fat Granola
INGREDIENTS:
- 1 cup almonds
- 1/2 cup pumpkin seeds
- 1/2 cup sunflower seeds
- 1 cup coconut chips
- 1/3 cup flaked almonds
- 1 tsp cinnamon
- 2 tsp stevia
- 2 tbsp ghee – melted
- 2 tbsp coconut oil – melted
- 1 tbsp honey or rice malt syrup
- pinch of salt
METHOD:
- Pre heat your oven to 160C and line a tray with baking paper
- Place your whole almonds, pumpkin seeds and sunflower seeds into a food processor and pulse until roughly chopped
- Pour into a large bowl and add the rest of the ingredients
- Mix until all ingredients are coated and sticky
- Spread out on the tray and place into the oven for 15-20 minutes, tossing halfway through. Be careful as it can burn easily so watch it!
- Store in an airtight container – delicious on top of your smoothie bowl
