Coconut sugar is also known as coconut blossom sugar is a palm sugar produced from the flower bud stem of the coconut palm. Coconut sugar comes in crystal or granule form. Producing coconut sugar is a two-step process. It starts with harvesting or "tapping" the flower bud stem of a coconut tree and cut into bamboo containers. The sap collected is placed over moderate heat to evaporate the moisture content which is about 80% water. As the water evaporates, it starts to transform into the crystal. This coconut sugar is 100% certified organic wit ha brown colour and slight hint of caramel.
