Some Tips to Use:
You need to pre-soak Dried Turtle Beans for at least 3 hours or overnight before cooking. This removes the naturally occurring Lectin found in many legumes which can impede digestion. For cooking, rinse pre-soaked soybeans, put them in a pot and boil them for around 2 hours or until soft. You can make wonderful mashed soybeans with these cooked ones for dips or backing. Or you can use whole cooked black beans in your choice of salads and soup as a good source of protein. Or use them as the main ingredient for tacos or re-fried chilli beans.
As a general note, DO NOT add salt while cooking any type of beans, as this can make their outer skins tough.
